Quick Roasted Butternut Squash Soup
I call this blender soup - which is both appealing, because I look for every opportunity to use my vitamin, but also because it means I barely have to do anything in the kitchen...Plus, its so creamy and cozy.

Ingredients:
1 butternut Squash
4 Garlic cloves
1/2 White onion
1 Sweet Potato
1 sprig of Thyme
1 sprig of Rosemary
Steps:
The best part about this recipe is, you don't really have to be perfect with the cook time or chopping skills, because you're just gonna throw it into a blender anyway.
Peel the butternut Squash. Scoop seeds out. Chop into cubes Do the same with the Sweet potato
Cut onion, and garlic.
Put everything on a large baking sheet, including the thyme and rosemary. Bake for 45-60 minutes at 375 degrees.
Place everything into the blender - blend on Med for 1 minute.
Top w/ parsley, pine nuts, parmesan etc.
